Mini Chocolate Lava Cakes

- 8 oz semisweet chocolate chips
- 1 stick butter, cut into pieces
- 1 teaspoon vanilla extract
- 4 eggs
- 1/2 cup sugar
- 1 tablespoon cocoa powder
- 4 tablespoons flour
- 1/4 teaspoon salt
Cooking Directions
In a double boiler, melt the chocolate chips, then add butter, then vanilla. Remove from heat. Smooth out the chocolate mixture with an electric mixer, then add eggs one at a time. Add in the sugar in portions to avoid lumps. Mix on high for 5 minutes until light, creamy, and thick. Cover and refrigerate.
Butter a 12-cup muffin tin and dust generously with cocoa powder. Fill using a 4 oz disher and bake at 375 ºF for 10 minutes. They will have wobbly centers, but they are done!
