Use leftover rice, or start the rice cooker about 2-3 hours before everything else. This gives the rice time to dry out. If cooking the rice day-of, use 1/4 cup less water than usual, and leave the rice cooker on until you start cooking.

Dice the scallions, Chinese sausage, and carrots.

Start by cooking the eggs. Crack and beat the eggs in a bowl. Add a concerning amount of sesame oil to a pan, then add the eggs and scramble them. Remove the eggs from the heat and place in a clean bowl.

Add the sausage, carrots, peas, and scallions along with a little more sesame oil. Cook until the mixture starts to smell good and the ingredients soften a little bit.

Add in the rice, soy sauce, and a generous sprinkle of MSG. Add the egg and mix everything together. Cook until the rice takes on a brown-gold hue and everything is heated through.

Optionally, pan-fry some of the fried rice separately to get it extra crispy.

Notes

If you do not add the MSG then you have made it wrong.
