Ingredients
- 1/2 cup cornmeal
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp kosher salt
- 1/4 cup neutral oil
- 1/4 cup unsalted butter, melted
- 2 large eggs, lightly beaten
- 1 tsp vanilla extract
- 1 tbsp honey
- 1 1/4 cups buttermilk, shaken
Cooking Directions
Preheat the oven to 350°F. Grease an 8-inch square or round baking pan.
In a large bowl, whisk together the cornmeal, flour, sugar, baking soda, baking powder, and salt. Whisk in the oil, melted butter, eggs, vanilla, honey, and buttermilk. Stir until everything is well combined.
Pour the mixture into the prepared pan and bake until golden brown and a toothpick inserted into the center of the pan comes out clean, 35 to 40 minutes. Let cool on a baking rack for 10 minutes before cutting into 8 to 10 squares or wedges. Serve warm.
