Blackberry Buckle

- 4 cups fresh blackberries
- 1.5 tablespoons sugar
- 1 teaspoon fresh lemon juice
- 6 tablespoons unsalted butter
- 0.5 teaspoons vanilla extract
- 1.25 cups flour
- 0.75 cups sugar
- 2 teaspoons baking powder
- pinch salt
- 1/8 teaspoons cinnamon
- 1 cup milk
- 0.5 teaspoons vanilla extract
- 1.5 tablespoons turbinado sugar (for topping)
Cooking Directions
Preheat the oven to 350 ºF.
Combine berries, sugar, lemon juice, and vanilla extract. Set aside.
Place butter in an 8 by 8-inch baking dish and melt in the oven.
Combine flour, sugar, baking powder, salt, and cinnamon in a bowl. In a separate bowl, combine milk and vanilla. Add liquids to solids and mix.
Spread the batter on top of the butter in the baking dish. Layer the berries on top, pressing them down into the batter. Try to evenly distribute the berries, as they tend to cluster in the middle otherwise.
Bake for 45 minutes. Check the buckle and sprinkle sugar on top. Bake for another 5-10 minutes, until the top is golden brown and the sugar is slightly melted.
Notes
Other berries work well too! Raspberries, blueberries, etc.
